Homemade Bacon Day3

The liquid being drawn out of the pork belly is starting to fill the dish. It’s amazing how much moisture was in the pork bellies.

The sugar has started to ferment.  I’m curious about how this part of the process is actually going to work and impart flavor in the bacon.
