Better than leftovers 3 - Pulled Pork

For my latest Better Than Leftovers entry, I smoked about 50 pounds of Boston butt roasts the other day. We gave away free pulled pork sandwiches for the fall kickoff of the Dayton Vineyard’s vineyardMEN ministry. We had a great turn out, but there was some pork left over. Some went to Hal, a friend of mine and the pastor that oversees vineyardMEN, and some came home.

It’s easy to just make plain old pulled pork sandwiches, and very good leftovers. This time of year, I like adding a slice of fresh tomato to the sandwich; it goes really well with the pork. But fresh tomatoes go with all kinds of stuff!

Add a little Liquid Livefire sauce, and that’s quite a lunch!

But to take the pulled pork leftovers into the breakfast meal, I did a simple meal of fried eggs, over medium, and some ciabatta bread I toasted, with pulled pork right in between, again topped with a bit of Liquid Livefire.

Here is what I’m finding the secret may be to my wife liking leftovers or not:
Reheat the food slowly, being careful to not overcook the food. My wife is really sensitive to the taste of overcooked food, so I try to either microwave food at 30 second or less intervals to ensure it doesn’t overheat, or I reheat on the stove slowly. The better I do this, the better the leftovers are, I think.
